The grapes are harvested early in the season to ensure low alcohol and high acid in the wine – two elements crucial for balanced sparkling wine. After a gentle pressing, the juice was fermented at low temperatures to retain the green apple and white nectarine aromas and flavours. This Yarra Valley Blanc de Blanc is the perfect accompaniment for any occasion – celebratory or otherwise. It can be enjoyed on its own or with oysters topped with a green apple granita.
